Ingredients

  • (~1.5 cups) 3 medium Ripe bananas (mashed)
  • (190g) 1 ½ cups  All-purpose flour
  • 1 tsp Baking soda
  • ½ tsp Salt
  • (115g) ½ cup Unsalted butter (melted)
  •  (150g) ¾ cup  Granulated sugar
  • 1 tsp Egg
  • 1 tsp Vanilla extract
  • (135g) ¾ cup Chocolate chips
  •  (50g) ½ cup Optional: Walnuts

Equipment

  • 9x5-inch loaf pan
  • Mixing bowls
  • Whisk or fork
  • Spatula
  • Cooling rack

Method

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. In a bowl, whisk flour, baking soda, and salt. Set aside.
  3. In another bowl, mix melted butter and sugar. Add the egg, vanilla, and mashed bananas, stirring until smooth.
  4. Gradually add dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.
  5. Gently fold in chocolate chips (and walnuts if using).
  6. Pour batter into the loaf pan. Optional: Sprinkle extra chocolate chips on top.
  7. Bake for 55–60 minutes or until a toothpick inserted comes out clean (a few crumbs are okay).
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack. Slice once fully cooled.

Notes

  1. Banana Ripeness: The spottier the bananas, the sweeter and moister the bread.
  2. Storage: Keep in an airtight container for 3 days at room temp or freeze for up to 3 months.
  3. Substitutions:
    • Use whole wheat flour for a healthier version.
    • Replace butter with coconut oil for a dairy-free option.
