Ingredients
  

  • large 3 Ripe bananas (mashed)
  • 1 ½ cups All-purpose flour
  • 1 tsp Baking soda
  • ½ tsp Salt
  • ½ tsp Ground cinnamon
  • ½ cup Unsalted butter (melted)
  • ¾ cup Brown sugar (packed)
  • large 2 Eggs
  • 1 tsp Vanilla extract
  • ½ cup Chopped walnuts (plus extra for topping)
  • 2 tbsp Milk or yogurt (optional, for extra moisture)

Method
 

  1. Prep: Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. Dry Ingredients: In a bowl, whisk flour, baking soda, salt, and cinnamon. Set aside.
  3. Wet Ingredients: In another bowl, mix melted butter and brown sugar. Add eggs, mashed bananas, and vanilla, stirring until combined.
  4. Combine: Gradually fold dry ingredients into the wet mix. Avoid overmixing. Stir in walnuts and milk/yogurt (if using).
  5. Bake: Pour batter into the loaf pan. Top with extra walnuts. Bake for 55–65 minutes or until a toothpick comes out clean.
  6. Cool: Let it rest in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Ripe Bananas: Use spotty, overripe bananas for maximum sweetness and moisture.
  • Storage: Keep in an airtight container for 3 days at room temp or freeze for up to 3 months.
