Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while heating.
Roll out the pizza dough on a floured surface to your desired thickness.
Transfer to a cornmeal-dusted baking sheet or pizza peel.
Brush the dough lightly with olive oil.
Spread ½ cup BBQ sauce evenly over the dough.
Sprinkle 1 cup mozzarella cheese, followed by chicken and red onions.
Drizzle remaining 2 tbsp BBQ sauce on top.
Add the rest of the cheese.
Bake for 12-15 minutes or until the crust is golden and cheese is bubbly.
Remove from oven and sprinkle with cilantro.
Let cool for 2 minutes, then slice and enjoy!
