In a bowl, mix warm water, sugar, and yeast. Let sit for 5–10 mins until frothy.
Add flour, salt, and olive oil (if using) to the yeast mixture. Stir until a shaggy dough forms.
Turn dough onto a floured surface and knead for 8–10 mins until smooth.
Place in a greased bowl, cover with a towel, and let rise for 1–2 hours (until doubled).
Punch down dough, shape into a loaf, and place on a baking sheet or in a loaf pan.
Cover and let rise for 30–45 mins.
Preheat oven to 375°F (190°C).
Bake for 25–30 mins until golden brown and hollow-sounding when tapped.
Cool on a wire rack before slicing.
