Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until fragrant (2-3 mins).
Add Vegetables: Stir in carrots, celery, and bell pepper. Cook for 5 minutes until slightly softened.
Add Cabbage & Seasonings: Mix in shredded cabbage, diced tomatoes, broth, paprika, thyme, bay leaf, salt, and pepper.
Simmer: Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender.
Adjust Seasoning: Taste and add more salt or pepper if needed.
Serve: Remove the bay leaf, garnish with fresh parsley, and serve hot.
