Ingredients
  

  • 1 tbsp Olive oil
  • 1 Medium onion, diced
  • 3 Garlic cloves, minced
  • 2 Carrots, sliced
  • 2 stalks Celery, chopped
  • ½ head Green cabbage, shredded
  • 1 Bell pepper, diced
  • 1 can Diced tomatoes
  • 6 cups Vegetable or chicken broth
  • 1 tsp Paprika
  • ½ tsp Dried thyme
  • 1 Bay leaf
  • to taste Salt & black pepper
  • 2 tbsp Fresh parsley, chopped (for garnish)

Method
 

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until fragrant (2-3 mins).
  2. Add Vegetables: Stir in carrots, celery, and bell pepper. Cook for 5 minutes until slightly softened.
  3. Add Cabbage & Seasonings: Mix in shredded cabbage, diced tomatoes, broth, paprika, thyme, bay leaf, salt, and pepper.
  4. Simmer: Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender.
  5. Adjust Seasoning: Taste and add more salt or pepper if needed.
  6. Serve: Remove the bay leaf, garnish with fresh parsley, and serve hot.

Notes

  • Storage: Keeps well in the fridge for 3-4 days or freeze for up to 3 months.
  • Variations: Add potatoes, beans, or lean meat for extra heartiness.
  • Dietary Adjustments: Use low-sodium broth for a healthier option.
