Ingredients

  • 1 box (15 oz) Cake mix (vanilla)
  • ½ cup Vegetable oil
  • 2 large Eggs
  • ½ cup Powdered sugar (for coating)

Equipment

  • Mixing bowl
  • Electric mixer or whisk
  • Baking sheet
  • Parchment paper
  • Cookie scoop (optional)

Method

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dough: In a bowl, combine cake mix, oil, and eggs until a thick dough forms.
  3. Scoop & Roll: Use a cookie scoop (or spoon) to form 1-inch balls, then roll each in powdered sugar for coating.
  4. Bake: Place dough balls on the baking sheet, 2 inches apart, and bake for 8-10 minutes until edges are set.
  5. Cool: Let cookies rest on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.

Notes

  • Storage: Keep in an airtight container for up to 5 days.
  • Variations: Try chocolate cake mix or add sprinkles for fun colors!
  • Tip: For extra softness, slightly underbake the cookies (they firm up as they cool).
