Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut cauliflower into florets and pulse in a food processor until finely crumbled (or grate using a box grater).
- Microwave riced cauliflower for 4-5 minutes (or steam), then let cool.
- Wrap in a cheesecloth and squeeze out all excess moisture (key for crispiness!).
- In a bowl, combine cauliflower, egg, mozzarella, parmesan, oregano, garlic powder, salt, and pepper.
- Press mixture into a 12-inch circle (~¼-inch thick) on the baking sheet.
- Bake for 15-20 minutes until golden and firm. Flip halfway (optional for extra crispness).
- Top with sauce, cheese, and desired toppings. Broil for 5-7 minutes until melted.

✔ For extra crispiness, bake crust an additional 5 minutes before adding toppings.
