Ingredients

  • (600g) 1 Cauliflower (riced)
  • large 1 Egg (beaten)
  • (50g) ½ cup Mozzarella cheese (shredded)
  • (25g) ¼ cup Parmesan cheese (grated)
  • (2.5g) ½ cup Dried oregano
  • (2.5g) ½ cup Garlic powder
  • (1g) ¼ tsp Salt
  • (1g) ¼ tsp Black pepper

Equipment

  • Food processor or box grater
  • Cheesecloth or clean kitchen towel
  • Baking sheet
  • Parchment paper
  • Mixing bowl

Method

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut cauliflower into florets and pulse in a food processor until finely crumbled (or grate using a box grater).
  3. Microwave riced cauliflower for 4-5 minutes (or steam), then let cool.
  4. Wrap in a cheesecloth and squeeze out all excess moisture (key for crispiness!).
  5. In a bowl, combine cauliflower, egg, mozzarella, parmesan, oregano, garlic powder, salt, and pepper.
  6. Press mixture into a 12-inch circle (~¼-inch thick) on the baking sheet.
  7. Bake for 15-20 minutes until golden and firm. Flip halfway (optional for extra crispness).
  8. Top with sauce, cheese, and desired toppings. Broil for 5-7 minutes until melted.

Notes

✔ For extra crispiness, bake crust an additional 5 minutes before adding toppings.
✔ Storage: Freeze pre-baked crusts for up to 1 month.
✔ Variation: Add 1 tbsp almond flour for a sturdier crust.
