In a blender or food processor, combine mayonnaise, chipotle peppers, adobo sauce, garlic, lime juice, smoked paprika, cumin, and salt.
Blend until smooth. If the sauce is too thick, add water (1 tbsp at a time) to reach desired consistency.
Taste and adjust salt, lime, or spice levels as needed. Add more adobo sauce for extra smokiness.
Transfer to an airtight container and refrigerate for at least 30 minutes before serving to let flavors meld.
Use as a drizzle, dip, or spread. Stores well for up to 1 week.
