Ingredients
  

  • 240g 1 cup Mayonnaise (or vegan mayo)
  • 2-3 Chipotle peppers in adobo sauce (adjust for spice)
  • 15ml 1 tbsp Adobo sauce (from the can)
  • 1 clove Garlic (minced)
  • 15ml 1 tbsp Lime juice (fresh)
  • 2.5g ½ tsp Smoked paprika
  • 2.5g ½ tsp Cumin
  • 1g ¼ tsp Salt
  • 15ml 1 tbsp Water (if needed for thinning)

  • Blender or food processor
  • Mixing bowl

Method
 

  1. In a blender or food processor, combine mayonnaise, chipotle peppers, adobo sauce, garlic, lime juice, smoked paprika, cumin, and salt.
  2. Blend until smooth. If the sauce is too thick, add water (1 tbsp at a time) to reach desired consistency.
  3. Taste and adjust salt, lime, or spice levels as needed. Add more adobo sauce for extra smokiness.
  4. Transfer to an airtight container and refrigerate for at least 30 minutes before serving to let flavors meld.
  5. Use as a drizzle, dip, or spread. Stores well for up to 1 week.

Notes

  • Spice Control: Start with 1-2 peppers for mild heat; add more for extra spice.
  • Vegan Option: Use vegan mayo for a plant-based version.
  • Uses: Great on tacos, grilled meats, roasted veggies, or as a sandwich spread.
