Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
Mix dry ingredients: In a bowl, whisk together flour, baking soda, and salt.
Cream butter & sugars: In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (~3 mins).
Add wet ingredients: Beat in eggs one at a time, then mix in vanilla.
Combine: Gradually add dry ingredients to the wet mixture, mixing just until combined.
Fold in chocolate chips (and nuts, if using).
Scoop dough: Drop rounded tablespoons of dough onto baking sheets, spacing 2 inches apart.
Bake for 9–11 minutes until edges are golden but centers are still soft.
Cool on baking sheets for 5 minutes, then transfer to a wire rack.
