Cottage Cheese Bread Recipe

 A soft, slightly tangy, and protein-packed bread made with cottage cheese for a tender crumb and rich flavor. Perfect for sandwiches or toast!

Ingredients
  

  • 240g 1 cup Cottage cheese (full-fat, blended smooth)
  • 60ml 1/4 cup Milk (or water)
  • 30ml 2 tbsp Honey (or sugar)
  • 5g 1 tsp Salt
  • 7g 1 packet Active dry yeast
  • 300g 2 1/2 cups All-purpose flour (or bread flour)
  • 14g 1 tbsp Butter (melted, for brushing)

Method
 

  1. Activate Yeast: Warm milk to 110°F (43°C). Dissolve honey and yeast in it. Let sit for 5–10 minutes until frothy.
  2. Mix Dough: In a bowl, combine blended cottage cheese, yeast mixture, and salt. Gradually add flour, stirring until a shaggy dough forms.
  3. Knead: Turn dough onto a floured surface. Knead for 5–7 minutes until smooth and elastic. Add flour as needed to prevent sticking.
  4. First Rise: Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1–1.5 hours or until doubled.
  5. Shape: Punch down dough, shape into a loaf, and place in a greased loaf pan. Cover and let rise again for 30–45 minutes.
  6. Bake: Preheat oven to 375°F (190°C). Bake for 35–45 minutes until golden brown and hollow-sounding when tapped.
  7. Finish: Brush with melted butter. Cool on a wire rack before slicing.
