Ingredients
  

  • 1cup Unsalted butter (softened)
  • ¾cup Granulated sugar
  • 1large Egg
  • 1tsp Vanilla extract
  • 2 ½cups All-purpose flour
  • ½tsp Baking powder
  • ¼tsp Salt
For the Frosting:
  • 8oz Cream cheese (softened)
  • ½cup Powdered sugar
  • 1tsp Vanilla extract
  • 1tsp Whipped cream or Cool Whip
For the Toppings:
  • 1cup Strawberries (sliced)
  • 1cup Blueberries
  • 1cup Kiwi (sliced)
  • ½cup Chocolate chips (optional)
  • ¼cup Shredded coconut (optional)

Equipment

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together butter and sugar until fluffy.
  3. Add egg and vanilla, mixing well.
  4. In a separate bowl, whisk flour, baking powder, and salt, then gradually mix into the wet ingredients.
  5. Roll out the dough into a 12-inch circle on a floured surface and transfer to a pizza pan or baking sheet.
  6. Bake for 12-15 minutes until lightly golden. Let it cool completely.
  7. Beat cream cheese, powdered sugar, and vanilla until smooth.
  8. Gently fold in whipped cream until well combined.
  9. Spread evenly over the cooled crust.
  10. Arrange sliced strawberries, blueberries, kiwi, and other toppings as desired.
  11. Sprinkle with chocolate chips or coconut (optional).
  12. Chill for 30 minutes before slicing and serving.
