Ingredients
  

  • 450g 1 lb Ground beef (80/20 lean/fat)
  • 1 Medium onion, diced
  • 3 Garlic cloves, minced
  • 2 Carrots, peeled and diced
  • 2 Celery stalks, diced
  • 480ml 2 cups Potatoes, peeled and cubed
  • 14.5oz 1 can Diced tomatoes (undrained)
  • 1L 4 cups Beef broth (low-sodium)
  • 5g 1 tsp Dried oregano
  • 5g 1 tsp Dried basil
  • 5g 1 tsp Salt (adjust to taste)
  • 2.5g ½ tsp Black pepper
  • 30ml 2 tbsp Tomato paste
  • 100g 1 cup Green beans, chopped (optional)
  • 30ml 2 tbsp Olive oil

Equipment

Method
 

  1. Brown the Beef: Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned (5–6 minutes). Drain excess fat.
  2. Sauté Veggies: Add onion, garlic, carrots, and celery. Cook for 3–4 minutes until softened.
  3. Add Potatoes & Seasonings: Stir in potatoes, tomatoes, beef broth, oregano, basil, salt, pepper, and tomato paste. Bring to a boil.
  4. Simmer: Reduce heat to low, cover, and simmer for 20–25 minutes until potatoes are tender.
  5. Optional Greens: Add green beans in the last 5 minutes for extra crunch.
  6. Adjust Taste: Season with extra salt/pepper if needed. Serve hot with crusty bread.

Notes

  • Storage: Refrigerate for up to 3 days or freeze for 2 months.
  • Substitutions: Use ground turkey for a lighter version, or add kidney beans for extra protein.
