Brown the Beef: Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned (5–6 minutes). Drain excess fat.
Sauté Veggies: Add onion, garlic, carrots, and celery. Cook for 3–4 minutes until softened.
Add Potatoes & Seasonings: Stir in potatoes, tomatoes, beef broth, oregano, basil, salt, pepper, and tomato paste. Bring to a boil.
Simmer: Reduce heat to low, cover, and simmer for 20–25 minutes until potatoes are tender.
Optional Greens: Add green beans in the last 5 minutes for extra crunch.
Adjust Taste: Season with extra salt/pepper if needed. Serve hot with crusty bread.
