Mix wet ingredients: In a bowl, mash bananas. Add honey, coconut oil, vanilla, and eggs. Whisk well.
Combine dry ingredients: In another bowl, mix flour, baking soda, baking powder, cinnamon, and salt.
Fold together: Gently mix wet and dry ingredients until just combined. Avoid overmixing. Fold in nuts/chocolate chips if using.
Bake: Pour batter into the loaf pan. Bake for 45–55 mins or until a toothpick comes out clean.
Cool: Let it rest for 10 mins in the pan, then transfer to a wire rack.
