Ingredients
  

  • 15 ml 1 tbsp Olive oil
  • 450 g 1 lb Italian sausage 
  • 1 Onion, diced
  • 3 Garlic cloves, minced
  • 5 g 1 tsp Dried oregano
  • 5 g 1 tsp Dried basil
  • 2.5 g ½ tsp Red pepper flakes 
  • 30 g 2 tbsp Tomato paste
  • 28 oz 1 can Crushed tomatoes
  • 1.5 L 6 cups Chicken or beef broth
  • 8 Lasagne noodles, broken into pieces
  • 100 g 1 cup Mozzarella cheese, shredded
  • 50 g ½ cup Parmesan cheese, grated
  • 120 ml ½ cup Heavy cream 
  • Salt & pepper to taste
  • Fresh basil for garnish

Method
 

  1. Sauté the Meat: Heat olive oil in a large pot over medium heat. Add sausage (or ground beef) and cook until browned. Remove excess fat if needed.
  2. Add Aromatics: Stir in onion, garlic, oregano, basil, and red pepper flakes. Cook for 2–3 minutes until fragrant.
  3. Tomato Base: Mix in tomato paste, crushed tomatoes, and broth. Bring to a boil.
  4. Cook Noodles: Add broken lasagne noodles and simmer for 10–12 minutes until tender.
  5. Finish with Cream & Cheese: Reduce heat, stir in heavy cream (if using), then sprinkle mozzarella and Parmesan. Let melt slightly.
  6. Season & Serve: Adjust salt and pepper. Garnish with fresh basil and extra cheese.

  • Vegetarian Option: Swap sausage for mushrooms or lentils.
  • Storage: Keeps refrigerated for 3 days (add broth when reheating).
  • Shortcut: Use store-bought marinara sauce instead of tomatoes + spices.
