No Bake Cookies Recipe

These easy No Bake Cookies are a classic treat made with oats, peanut butter, cocoa, and sweetened with sugar. They require no oven, set quickly, and are perfect for satisfying sweet cravings in minutes!

Ingredients
  

  • ½ cup 115g Unsalted butter Or margarine
  • 1 ½ cups 300g Granulated sugar Can reduce to 1 cup for less sweetness
  • ¼ cup 25g Cocoa powder Unsweetened
  • ½ cup 120ml Milk Dairy or plant-based
  • ½ cup 125g Creamy peanut butter Natural or regular
  • 1 tsp 5ml Vanilla extract
  • 3 cups 270g Quick oats Or rolled oats for chewier texture
  • ¼ tsp 1g Salt Omit if using salted butter

Method
 

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper or wax paper. Set aside.
  2. Melt Ingredients: In a medium saucepan, combine butter, sugar, cocoa powder, and milk. Heat over medium heat, stirring constantly until the mixture boils. Let it boil for 1 minute, then remove from heat.
  3. Add Peanut Butter & Vanilla: Stir in peanut butter and vanilla extract until smooth.
  4. Mix in Oats: Fold in the oats until fully coated.
  5. Shape Cookies: Drop tablespoonfuls of the mixture onto the prepared baking sheet. Flatten slightly with the back of a spoon.
  6. Chill: Let the cookies cool at room temperature for 30 minutes (or refrigerate for 15 mins) until firm.

Notes

  1. Texture Tips: For softer cookies, reduce boiling time to 45 seconds. For firmer cookies, boil for 1.5 minutes.
  2. Substitutions:
    • Swap peanut butter for almond butter or sunflower seed butter.
    • Use coconut sugar for a less refined option.
  3. Storage: Keep
