  • 180g 1 ½ cups Bread flour (or all-purpose)
  • 120g 1 cup Whole wheat flour
  • 30g 1 tsp Sugar
  • 6g 1 tsp Salt
  • 7g 1 packet Active dry yeast
  • 240ml 1 cup Warm water (110°F/45°C)
  • 30ml 2 tbsp Honey
  • 15ml 1 tbsp Molasses (or extra honey)
  • 30g 2 tbsp Butter (melted, divided)
  • 15g 1 tbsp Cocoa powder (for color, optional)
For Topping:
  • 30g 2 tbsp Butter (melted)
  • 5g 1 tsp Coarse salt or flaky sea salt

Equipment

  • Stand mixer (or mixing bowl)
  • Baking sheet
  • Parchment paper
  • Pastry brush

Method

  1. In a small bowl, mix warm water, honey, and yeast. Let sit for 5–10 minutes until frothy.
  2. In a stand mixer, combine flours, sugar, salt, and cocoa powder (if using).
  3. Add yeast mixture, molasses, and 1 tbsp melted butter. Mix until a soft dough forms.
  4. Knead for 5–7 minutes (or by hand for 10 minutes) until smooth and elastic.
  5. Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1–2 hours or until doubled.
  6. Punch down dough and divide into 8–10 small rolls. Shape into rounds or oblong loaves.
  7. Place on a parchment-lined baking sheet, cover, and let rise for 30 minutes.
  8. Preheat oven to 350°F (175°C).
  9. Brush rolls with remaining melted butter and bake for 15–20 minutes until golden.
  10. Remove from oven, brush with more butter, and sprinkle with coarse salt.

Notes

  • Storage: Keep in an airtight container for up to 3 days. Reheat with butter for best texture.
  • Variations: Add 1 tsp garlic powder to the dough for a savory twist.
  • No Yeast? Substitute with 2 tsp baking powder + 1 tsp baking soda, but skip the rising steps.
