In a small bowl, mix warm water, honey, and yeast. Let sit for 5–10 minutes until frothy.
In a stand mixer, combine flours, sugar, salt, and cocoa powder (if using).
Add yeast mixture, molasses, and 1 tbsp melted butter. Mix until a soft dough forms.
Knead for 5–7 minutes (or by hand for 10 minutes) until smooth and elastic.
Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1–2 hours or until doubled.
Punch down dough and divide into 8–10 small rolls. Shape into rounds or oblong loaves.
Place on a parchment-lined baking sheet, cover, and let rise for 30 minutes.
Preheat oven to 350°F (175°C).
Brush rolls with remaining melted butter and bake for 15–20 minutes until golden.
Remove from oven, brush with more butter, and sprinkle with coarse salt.
