Prep: Slice sausage, chop potatoes/onion/pepper.
Cook Potatoes: Heat oil in skillet over medium-high. Add potatoes, season with salt/pepper, and cook 10 mins until golden-brown (stir occasionally).
Add Veggies: Push potatoes to one side. Add onion, bell pepper, and sausage. Sauté 5 mins until onions soften.
Season: Sprinkle garlic powder, paprika, and thyme. Stir to combine.
Finish Cooking: Reduce heat to medium, cover, and cook 5–7 mins until potatoes are tender.
