Ingredients
  

  • 450g 1 lb smoked sausage (sliced into coins)
  • 680g 1.5 lbs baby potatoes (halved or quartered)
  • medium 1 onion (diced)
  • medium 1 bell pepper (diced)
  • 30ml 2 tbsp olive oil
  • 5g 1 tsp garlic powder
  • 5g 1 tsp paprika
  • 2.5g ½ tsp dried thyme
  • to taste salt & black pepper
  • fresh 2 tbsp parsley (chopped, for garnish)

Equipment

  • Large skillet (cast iron preferred)
  • Wooden spoon/spatula
  • Knife & cutting board

Method
 

  1. Prep: Slice sausage, chop potatoes/onion/pepper.
  2. Cook Potatoes: Heat oil in skillet over medium-high. Add potatoes, season with salt/pepper, and cook 10 mins until golden-brown (stir occasionally).
  3. Add Veggies: Push potatoes to one side. Add onion, bell pepper, and sausage. Sauté 5 mins until onions soften.
  4. Season: Sprinkle garlic powder, paprika, and thyme. Stir to combine.
  5. Finish Cooking: Reduce heat to medium, cover, and cook 5–7 mins until potatoes are tender.
  6. Garnish & Serve: Top with fresh parsley. Serve hot!

Notes

  • Substitutions: Use kielbasa or chicken sausage. Add spinach for greens.
  • Spice it up: Add red pepper flakes or cayenne.
  • Storage: Refrigerate leftovers for 3 days. Reheat in skillet.
