In another bowl, mix pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
Stir in nuts (if using).
Pour batter into the prepared loaf pan.
Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack.
