Ingredients
  

  • 1 cup (230g) Unsalted butter, softened
  • 1 cup (200g) Granulated sugar
  • 1 Large Egg
  • 2 tsp (10ml) Vanilla extract
  • 3 cups (360g) All-purpose flour
  • 1½ tsp (7g) Baking powder
  • ½ tsp (3g) Salt

Method
 

  1. In a large bowl, beat softened butter and sugar until light and fluffy (2-3 mins).
  2. Mix in the egg and vanilla until combined.
  3. Whisk flour, baking powder, and salt in a separate bowl. Gradually add to the wet mix until a dough forms.
  4. Divide dough into 2 discs, wrap in plastic, and refrigerate for 1 hour (or freeze for 20 mins).
  5. Preheat oven to 350°F (175°C). Roll dough to ¼-inch thickness on a floured surface. Cut into shapes.
  6. Place cookies on parchment-lined baking sheets. Bake for 8-10 mins until edges are lightly golden.
  7. Let cool on a wire rack before decorating with icing or sprinkles.

Notes

  • Chilling is key to prevent spreading.
  • For crispier cookies, bake 1-2 mins longer.
  • Dough can be frozen for up to 3 months.
  • Decorate with royal icing or melted chocolate for holidays.
