A hearty, flavorful Taco Soup packed with ground beef, beans, corn, and bold spices—perfect for a quick weeknight dinner! This one-pot meal is easy to make and tastes even better the next day.

Ingredients
  

  • 450g 1 lb Ground beef (or turkey/chicken)
  • 1 1 Onion, diced
  • 3 1 Garlic cloves, minced
  • 15 oz 1 Can black beans, drained & rinsed
  • 15 oz 1 Can kidney beans, drained & rinsed
  • 15 oz 1 Can corn, drained (or frozen corn)
  • 15 oz 1 Can diced tomatoes (with juices)
  • 8 oz 1 Can tomato sauce
  • 1 L 4 cups Beef or chicken broth
  • 1 oz 1 Packet taco seasoning (or homemade)
  • 5g 1 tsp Cumin
  • 5g 1 tsp Chili powder
  • 2.5g ½ tsp Salt (adjust to taste)
  • 2.5g ½ tsp Black pepper
  • 15ml 1 tbsp Olive oil
Optional Toppings
  • Shredded cheese
  • Sour cream
  • Avocado
  • Tortilla chips
  • Fresh cilantro
  • Lime wedges

Equipment

  • Large pot or Dutch oven
  • wooden spoon

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook for 2-3 minutes until soft.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Add ground beef, breaking it apart, and cook until browned (5-6 min). Drain excess fat if needed.
  5. Stir in taco seasoning, cumin, chili powder, salt, and pepper.
  6. Pour in broth, tomato sauce, and diced tomatoes (with juices). Stir well.
  7. Mix in black beans, kidney beans, and corn.
  8. Bring to a boil, then reduce heat and simmer for 15 minutes.
  9. Taste and adjust seasoning if needed.
  10. Serve hot with toppings like cheese, sour cream, and tortilla chips.

Notes

✅ Make it Vegetarian: Swap beef for plant-based crumbles and use vegetable broth.
✅ Slow Cooker Option: Brown meat first, then add everything to the slow cooker on LOW for 4-6 hours.
✅ Storage: Keeps well in the fridge for 3-4 days or freeze for up to 3 months.
