Ingredients
  

  • cups 2 ½ Whole wheat flour
  • cups 1 ½ All-purpose flour (or bread flour)
  • tbsp 2 Honey (or maple syrup)
  • tsp 2 ¼ Active dry yeast
  • tsp 1 Salt
  • cups 1 ¼ Warm water (110°F/45°C)
  • tbsp 2 Olive oil (or melted butter)
  • tbsp 1 Seeds (optional: sunflower, flax, sesame)

  • Stand mixer with dough hook (optional)
  • Measuring cups and spoons
  • Loaf pan (9x5 inches)
  • Parchment paper (optional)

Method
 

  1. In a small bowl, mix warm water, honey, and yeast. Let sit for 5-10 minutes until frothy.
  2. In a large bowl, whisk together whole wheat flour, all-purpose flour, and salt.
  3. Pour the yeast mixture and olive oil into the dry ingredients. Mix until a dough forms.
  4. Knead by hand (10-12 minutes) or with a stand mixer (5-7 minutes) until smooth and elastic.
  5. Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1-1.5 hours or until doubled.
  6. Punch down the dough and shape into a loaf. Place in a greased loaf pan.
  7. Cover and let rise for 30-45 minutes until puffy.
  8. Preheat oven to 375°F (190°C).
  9. Bake for 25-30 minutes until golden and hollow-sounding when tapped.
  10. Let cool in the pan for 10 minutes, then transfer to a wire rack.

  • Storage: Keep in an airtight container for 3-4 days or freeze for up to 3 months.
  • Variations: Add nuts, oats, or dried herbs for extra flavor.
  • Tip: For a softer crust, brush with butter after baking.
