Wonton Soup Recipe

Ingredients
  

For the Wontons:
  • 200g (7 oz) ground pork
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 1 garlic clove, minced
  • 1 green onion, finely chopped
  • 1 tsp cornstarch
  • ¼ tsp white pepper
  • 20-25 wonton wrappers
  • 2 tbsp water (for sealing)
For the Broth:
  • 1.5L (6 cups) chicken or vegetable stock
  • 2 slices ginger
  • 1 garlic clove, smashed
  • 1 tbsp soy sauce
  • ½ tsp sesame oil
  • Salt to taste
Garnishes (Optional):
  • Sliced green onions
  • Bok choy or spinach
  • Chili oil

Equipment

  • Mixing bowls
  • Small spoon or wonton filler
  • Large pot (for broth)
  • Slotted spoon

Method
 

  1. In a bowl, mix pork, soy sauce, sesame oil, ginger, garlic, green onion, cornstarch, and white pepper.
  2. Stir vigorously until the mixture becomes sticky (about 2 minutes).
  3. Place 1 tsp of filling in the center of a wonton wrapper.
  4. Dip your finger in water and moisten the edges.
  5. Fold into a triangle, press to seal, then bring the two corners together and pinch to form a classic wonton shape. Repeat for all.
  6. Bring a pot of water to a boil. Gently drop in wontons (in batches) and cook for 3-4 minutes until they float. Remove with a slotted spoon.
  7. In a separate pot, simmer stock with ginger, garlic, soy sauce, and sesame oil for 10 minutes. Strain if desired.
  8. Divide cooked wontons into bowls. Ladle hot broth over them.
  9. Garnish with green onions and leafy greens. Serve immediately!

Notes

  • Freezing: Uncooked wontons can be frozen on a tray, then stored in a bag for 3 months. Cook directly from frozen (add 1-2 extra minutes).
  • Substitutes: Use shrimp or tofu for a different filling.
  • Broth Tip: For extra depth, add a splash of Chinese cooking wine or star anise while simmering.
