Ingredients
  

  • 2 ½ cups All-purpose flour
  • 1 ½ cups Granulated sugar
  • ½ cup (1 stick) Unsalted butter (softened)
  • 3 large Eggs
  • 1 cup Milk
  • 2 ½ tsp Baking powder
  • 2 tsp Vanilla extract
  • ½ tsp Salt

Equipment

  • 9-inch round cake pan (or 8x8 square pan)
  • Mixing bowls
  • Electric mixer (hand or stand)
  • Whisk/spatula
  • Cooling rack

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan (or line with parchment paper).
  3. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  4. In a large bowl, beat butter and sugar until light and fluffy (3-4 mins).
  5. Add eggs one at a time, mixing well after each.
  6. Stir in vanilla extract.
  7. Add ⅓ of the flour mixture, mix lightly.
  8. Pour in ½ of the milk, mix. Repeat, ending with flour.
  9. Pour batter into the pan, smooth the top.
  10. Bake 25-30 mins or until a toothpick comes out clean.
  11. Let cool 10 mins in the pan, then transfer to a wire rack.
  12. Frost with vanilla buttercream or enjoy plain!

Notes

✔ Room-temperature ingredients (butter, eggs, milk) ensure a smooth batter.
✔ Do not overmix—this can make the cake dense.
✔ For layers: Double the recipe and use two pans.
✔ Storage: Keep covered at room temp for 2 days or refrigerate for up to 5 days.
