Method
- Preheat oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan (or line with parchment paper).
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat butter and sugar until light and fluffy (3-4 mins).
- Add eggs one at a time, mixing well after each.
- Stir in vanilla extract.
- Add ⅓ of the flour mixture, mix lightly.
- Pour in ½ of the milk, mix. Repeat, ending with flour.
- Pour batter into the pan, smooth the top.
- Bake 25-30 mins or until a toothpick comes out clean.
- Let cool 10 mins in the pan, then transfer to a wire rack.
- Frost with vanilla buttercream or enjoy plain!
